The popular Patisserie, located in Standish, is run by Bake Off: The Professionals star Andrew Harwood and his wife Sarah

It's just after dawn on a business park in Chorley, the fog still lingers above the surrounding fields, and the distant hum of traffic building on the M61 can just about be heard in the background.

"Before lockdown we spoke about it, Sarah was working in a nursery and I had been working for a larger patisserie and then a dairy company, but then at the start of the pandemic, I received a phone call saying everyone would lose their job and had to reapply. But they needn't have worried, because they've been embraced with open arms in the community thanks to their creative and modern twists on classics like cheesecake and lemon meringue pie, not to mention their world-class chocolates and macarons. As well as those local to Standish, the shop has also been known to attract people from over the border to Lancashire as well as Cumbria, and even further afield.

“The patisserie is all based around what is available to us," explains Andrew. "Summer is always easier for us, everything is in abundance, whether that’s strawberries, raspberries. blackcurrants, or gooseberries, this time of year is more difficult so we use fruits like pineapple, or blood oranges, maybe things that are in season in the right countries like Italy or nuts that are good at this time of year.

“It’s been great here in Standish, we've been supported since day one. People were quite excited before we opened because we did put some feelers out, and with it being a small village we always said we didn’t want to take away from anyone else, so people asked about takeaway coffee, so we’ll suggest one of them instead - everyone needs to support one another.

"Always after the purest ingredients we can get without all the nasty bits. You can’t always avoid it completely though because that’s how things are produced, pumped with stabilisers and so on.”
